The monthly Capital (12-1985), in the service "Le migliori salumerie" of Germano Pellizzoni and Patrizia Ribuoli it publishes a rich and interesting article on the best delicatessens in Italy. In Umbria the authors choose only a shop of alimentary: Gambacorta, Bottega del Bongustaio. They advise besides to taste its specialties: "meats of wild boar, cheeses of goat, black truffle."
